Let’s go to Russia, exact location Siberia region, where we will learn about Siberian Caviar. It comes from the Siberian sturgeon (Acipenser baerii). The story of caviar and surgeon started a long long time ago and could be found as early as 4th century BC. This pre-historical migratory fish has lived over 250 million year. Its living habitat has been in the cold water of northern hemisphere. Aristotle recorded that within the reception of honoured guests, caviar was served along with flowers and trumpets. This symbolic gesture demonstrated the sign of exclusivity and luxury of Greek culture. The idea of exclusive delicacy was coined because caviar couldn’t be kept for a long time hence known to be a limited quantity or limited edition. The name caviar was derived from Persian language. “khag-viar” translated into “small black eggs” in english language. Also another popular legend where Persian people processed and developed salted caviar which hold the power of medicinal powers to cure sickness. This was called “khav-yar” translated into “cake of power” in english. Unlike Persian and Greeks, the people in the region of Volga and Caspian sea ate caviar as a basic food because it was easily spoiled. Their definition of delicacy in various regions is not the same. Nowadays this cuisine is enjoyed by many. The advancement of technology in the refrigerator meaning that caviar can be kept in a great condition for a long time. Its price is kept at affordable level.
